Savory Lentil Soup

Evelyn Anderson made this for our family when we came home from the hospital after Dad had his surgery.



Savory Lentil Soup            


2 cups lentils
8 cups water
½ pound bulk sausage
½ cup chopped onion
½ cup chopped celery
½ cup chopped carrots
3 T snipped parsley
1 clove garlic minced
2 ½ t. salt
¼ t. oregano, crushed
1 can (1 lb) tomatoes
2 T wine vinegar

1.      Rinse lentils, drain and place in soup kettle with 8 cups of water.
2.      Make sausage into tiny balls and add to lentil water with next 8 ingredients.
3.      Cover and simmer 1 ½ hours
4.      Add tomatoes and vinegar.
5.      Simmer covered for 30 minutes.
6.      Season to taste.
