Piggies!

Piggies have become very popular lately. They are so cute!
Jann gave us a Piggie mold when she was visiting in July. We are loving the silliness of the piggies!

You can order them here.

This is my email to my sisters of ideas of how to use the mold.

I just can't bring myself to say "pig mold". It just sounds so gross!

I did some research on how to use the piggies and found quite a lot of ideas. There was one recipe shared for Lil Smokies and pancake batter... a little something that I've decided should be called...

Pig and Pancake!

1/2 cup pancake mix
1/2 cup water
Mix together and pour in mold.

Lil Smokies (You could use hot dogs and cut them up)
Put one in each piggie.

Bake at 425 degrees for 20 minutes. Cool a little, then turn out onto a cooling rack.

Options:
* Heat the Lil Smokies for a little bit before adding to the piggies.

The recipe doesn't say how to eat them but I want to dip them in maple syrup. I wonder if you could add some maple syrup to the pancake mix....?

Other ideas for piggies:
Canned Biscuits (or Crescent Dough) and Lil Smokies
Cornbread
Cake
Nut Breads
Chocolates
Peanut Butter Cups
Eggs
Candy (Mints)
Brownies
Jello
Ice

French Pancakes

This is a recipe the Aunt Beulah made for us when we spent the night. She called them French Pancakes, but we would call them crepes now. I love them! They are my most favorite breakfast!

French Pancakes

These are slices of the French Pancake.
1 egg
1/4 cup flour
1/4 cup milk
Dash of salt

Mix all ingredients together. Pour thinly into a skillet and fry quickly on both sides. Spread with butter and sprinkle with cinnamon and sugar. Roll up and serve. Yum!

Sunday Morning Quiche

This is my favorite recipe for quiche. I love to create different additions for the quiche.

Sunday Morning Quiche

1 unbaked 9" pie shell
3 large eggs
1 cup grated cheddar or swiss cheese
2/3 cup evaporated milk
1 tablespoon finely chopped onion
1/4 cup sliced fresh mushrooms
3/4 cup chopped, cooked ham, crab or shrimp
1 tablespoon green pepper or celery

Mix eggs, cheese and milk. Stir in remaining ingredients and pour into the pie shell. Bake at 450 degreese for 15 minutes. Reduce the heat to 350 degrees and bake for 10-15 minutes until light brown and knife stuck in the center comes out clean. Remove from the oven and serve immediately.

Serves 6.

I like to add spinach or asparagus. Leave out the meat and add extra cheese. Be creative and try different mixtures.

Custard

Jay has been looking for a recipe that was like the custard that his Grandma used to make for him. It is a favorite childhood memory he has of his Grandma serving custard when he went to visit her.

Picture is from herbivoracious.com

Custard

1 1/2 cups milk
2 teaspoons cornstarch
1 tablespoon sugar
3 egg yolks
1/2 teaspoon vanilla

Mix 2 tablespoons of the milk with the cornstarch in a saucepan. When the cornstarch is dissolved, slowly add the rest of the milk and the sugar. Cook over moderated heat until the sauce starts to thicken and comes to a boil. Remover from the heat.  In a small bowl, beat the egg yolks with a fork. Take a cup of the sauce and slowly add it to the eggs, beating briskly as you pour. Return the egg/sauce mixture to the saucepan, stirring into the hot sauce.  Bring the mixture back to a boil, stirring constantly. Remove from the heat and add the vanilla. Pour custard into a bowl, a jug or a pitcher to serve.

To prevent the custard from forming a skin as it cools, cover it with plastic wrap.

Pickled Egg, Please.

This is a recipe that we have had for a very long time. It is Jay's favorite thing at Easter time. What do you do with leftover hard boiled eggs? Pickle them, of course!

Pickled Eggs

Pickling Brine:
2 c. white vinegar
2 T. sugar
1 t. salt
1 t. pickling spices
1 medium onion, sliced

12 hardboiled eggs

Bring all ingredients (except eggs) to a boil in a saucepan and let simmer for 5 minutes. Place eggs in a container (large jar), then pour the liquid over. Put on the lid and set aside for 24 hours. Eggs can be replaced as they are eaten (but they won't be as strong flavored).

Flourless Breakfast Crepes

I had breakfast at my friend Lynette's house recently and she served crepes. They were so delicious that I had to get the recipe from her.

Crepes

1 egg
1 T of oil
1 T milk
1 t vanilla
2 packets of splenda (I used xylitol.)
pinch of salt

Mix together and pour half in pan and cook.  Cover pan with a lid until the egg is set and then flip it and cook until light golden.

Makes 2 crepes (1 serving)

Filling-
Cottage cheese with splenda (I used xylitol.) Put a spoonful or two in center of crepe and roll up.

Top with sliced strawberries. Or any sliced fruit. Or a spoonful of jam, if you don't have fruit.
