5 Decker Dinner

We had this recipe for dinner often when our children were growing up. I had forgotten about it for the past 10 years or so. I was excited when I found it in the recipe file box today. As I looked over the ingredients, I realized that all of these ingredients were in the refrigerator or panty. It was meant to be!

It is 5 Decker Dinner is because it is layered...5 layers...or 6 or 7, depending on what you want to include in the dinner. What do you have in your refrigerator?

5 Decker Dinner

4 strips of bacon (Cut in pieces or leave whole)
1 lb. hamburger (Formed into patties or break it into pieces. Your choice!)
4 medium potatoes, thin sliced
4 large carrots, thin sliced
1 large onion, thin sliced
Salt and pepper
1/2 cup water

Place the bacon in a skillet or dutch oven. Fry the bacon on one side. Turn the bacon and place the hamburger on top.  Season the hamburger. Layer the potatoes, carrots, onion and green pepper on top. Season. Add the water, cover and steam on medium low for 30 minutes.

Serves 4.

Additonal layers may be:
Green beans
Peas
Celery
Corn

Chinese Rice Casserole

Mom called me today to see if I had an old recipe that she had been thinking about. And, guess what!? I did! She said that we had this casserole often when we were growning up but stopped making it because it was too salty for Dad's high blood pressure. When I read that the recipe calls for 2 teaspoons of soy sauce, I really don't think that it would effect his blood pressure that much. But, maybe it was the extra soy sauce that Dad would add to it during dinner!

Chinese Rice Casserole

1 pound of hamburger
1 cup diced onions
1 cup diced celery (Does this seem excessive to you, too?)
1 can cream of mushroom soup
1 can cream of chicken soup (Cream of celery would be good, too.)
2 teaspoons soy sauce
1/2 cup water
3 c. cooked rice

1 small can of chow mein noodles

Brown the hamburger. Add the other ingredients, EXCEPT the chow mein noodles. Place in a 9x13 casserole dish and top with the chow mein noodles. Bake at 350 degrees for 20 minutes. Serves 6-8.

I found the recipe on allrecipes.com, if you want a little bit different version.

Spaghetti and Meatballs

Photo and recipe courtesy of Our Best Bites. Original post found here.

This is the best spaghetti and meatballs I've ever had. It's very fresh with lots of diced tomatoes and onions. Although we've never done this, we think it would be awesome if you want to make it meatless and just add sauteed mushrooms.

Spaghetti and Meatballs

Recipe by Our Best Bites

Italian Meatballs:

1/2 lb. lean ground beef
1/2 lb. Italian sausage (some of my kids don’t like this, so I now just use all ground beef)
1/4 c. dry bread crumbs
1/2 tsp. pepper
2 Tbsp. dehydrated onion
2 eggs, lightly beaten
2 Tbsp. freshly grated Parmesan cheese (or the canned stuff is fine, but of course not as good as fresh)
1 tsp. basil
1/2 tsp. parsley
1-2 cloves garlic, minced
1 tsp. salt

Turn on the oven broiler. Line a baking sheet with aluminum foil and spray with nonstick cooking spray. Set aside.

Gently combine all ingredients in a medium bowl. Shape the meat mixture into meatballs. Place the meatballs on the prepared baking sheet.

Place the baking sheet in the oven and cook for 7-10 minutes or until the meatballs are becoming brown and fragrant. If you’re going to be simmering the meatballs in soup or sauce, it’s best to cook them until they’re just brown so they can finish cooking in the sauce or soup and release some of their flavor into the cooking liquid.

Sauce:

1 large onion, chopped
4-5 cloves garlic, minced or pressed
1-2 Tbs Olive oil
2 28-oz. cans crushed tomatoes
16 oz. tomato sauce
1-2 Tbsp. sugar (to taste)
2 tsp. basil
1 tsp. Italian seasoning
Pinch of red pepper flakes
Salt and pepper to taste
Pinch of baking soda (to help neutralize the acid)

Heat olive oil in a large skillet. Add onion and garlic and cook until onions are translucent and garlic is fragrant. Add remaining sauce ingredients and combine well. Bring to a simmer and add meatballs. Simmer on low, uncovered, until desired consistency is reached–about 25-30 minutes for a sauce that’s of medium consistency. Serves 8-10.

FREEZER MEAL INSTRUCTIONS:

Prepare meatballs as directed, but divide the meatballs among two freezer-safe containers. Prepare sauce through adding all ingredients to the pan, but don’t simmer; rather, divide the sauce among the two containers. Freeze until ready to use. When ready to use, place in slow cooker and cook on low for about 5-6 hours, although you’ll want to keep an eye on the sauce and make sure it’s not burning if you go for the whole 6 hours.

Joe's Special

(photo from popsugar.com because they take much better pictures than I do!)

One of my favorite food blogs is called Budget Bytes. The author posts simple and tasty recipes and I like that her motto is "My stomach is full and my wallet is too." One of her recipes we love and ate tonight is Joe's Special.  After a little research I discovered that this is a recipe started in the 1920's at a San Francisco restaurant called Joe's (hence the name). You can find lots of variations on the internet, but I've only tried this one so far. We've had it with both ground beef and ground turkey and both work well. We think the thing that makes this so great is the feta cheese. What's not to love about feta? We eat this with toast and a little sriracha sauce because the budget bytes author is obsessed with sriracha and suggested it.

Joe's Special

INGREDIENTS
2 Tbsp
olive oil
1 small
yellow onion
2 cloves
garlic
1 lb.
ground beef
1.5 tsp
dried oregano
1/2 tsp
salt
1 Tbsp
worcestershire sauce
1/2 lb.
frozen chopped spinach
6 large
eggs
2 oz.
feta cheese (optional)
2 Tbsp
grated parmesan

STEP 1: Mince the garlic and dice the onion. Cook both in skillet with olive oil over medium heat until soft and transparent (about 5 minutes).
STEP 2: Add the ground beef, oregano, salt, and worcestershire sauce. Cook until the beef is no longer pink, breaking it up into pieces as it cooks (7-10 minutes).
STEP 3: Once the beef is fully cooked, add the frozen spinach. Cook and stir until it has thawed and heated through, breaking up clumps as you go.
STEP 4: Briefly whisk 6 eggs in a bowl. Push the beef and spinach mixture to one side of the skillet (or make a well in the center) and pour in the eggs. Gently scramble the eggs until they are cooked through, but still moist. Try not to mix them into the meat as they cook or you'll have beef coated in egg, rather than clumps of cooked egg. Once the egg is cooked, stir it into the beef mixture and turn off the burner.
STEP 5: Crumble or roughly chop the feta cheese and sprinkle it over the skillet. Also sprinkle with grated parmesan cheese. Stir to combine, taste, adjust the salt if needed, and then serve.
