Cherry Mini-Cheesecakes
2 (8oz) pkg cream cheese, softened
2 eggs, beaten
1 t vanilla
3/4 c sugar
1 T lemon juice
18 vanilla wafers
1 can cherry pie filling
Beat together cream cheese, eggs, vanilla, sugar, and lemon juice.
Put 18 paper baking cups in muffin tins.
Place 1 vanilla wafer in each cup and top
with cream cheese mixture.
Bake at 350 for 12 to 15 minutes. When cool,
top with cherry filling.
