Pumpkin Pancakes
1 egg
1 cup buttermilk
¼ cup pumpkin butter
1 cup white (or wheat) flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
Beat egg; add remaining ingredients and beat until smooth. Cook pancakes as usual on hot griddle or pan.
(Alternatively, just add the pumpkin butter to your favorite pancake
mix for a quick special treat!)
How to Make Mashed Pumpkin: Chop into small pieces and remove skin. Boil until soft. Discard liquid. Mash until well combined and uniform. Let sit in strainer for several hours to drain remaining water.
Pumpkin Butter
For every 1½ cups of mashed pumpkin add:
1 cup white sugar
1½ tsp ground cinnamon
3/8 tsp ground nutmeg
3/8 tsp ground ginger
1/4 tsp ground cloves
Combine all ingredients in a pot; bring to a boil, reduce heat, and
simmer uncovered for 30 minutes. Bottle
according to the directions on the mason jar lids and enjoy for many months to
come!
