Banana Nut Bread

From the Betty Crocker's Cookbook 1978
This is my favorite banana bread recipe.

Banana Nut Bread

2 1/2 cups flour
1/2 cup 
1/2 cup brown sugar
3 1/2 teaspoon baking powder
1 teaspoon salt
1 1/4 cup mashed bananas
3 tablespoon oil
1/3 cup milk
1 egg
1 cup chopped nuts

Heat oven to 350 degrees. Grease the bottom only of loaf pans, 9x5x3 inches (or 2 loaf pans, 8 1/2x4 1/2x 2 1/2 inches). Mix all ingredients, beat 30 seconds. Pour into pan(s). Bake until wooden toothpick inserted in center comes out clean, 55 to 65 minutes. Cool slightly. Loosen side of loaf from pan, remove to cool.

Banana Nut Bread

1/2 cup butter
1 cup sugar
2 eggs
1 cup mashed bananas
1/4 cup milk
1 teaspoon lemon juice
2 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped nuts

Cream butter and sugar. Add eggs and beat. Add bananas, milk and lemon juice. Sift dry ingredients and add. Add nuts. Bake in well-greased 8x4x3 inch loaf pan for 1 hour at 350 degrees. Makes 1 loaf.

Banana Bread

1/3 cup fat (shortening 
1 cup sugar
1 egg
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1 cup mashed bananas
1/2 teaspoon baking soda
2 cups flour
3 tablespoon milk
1/2 cup chopped nuts

Cream fat, sugar and egg together until light and add the banana and vanilla. Add the dry ingredients and nuts. Put in a greased loaf pan. Let sit for 20 minutes. Bake one hour at 350 degrees until toothpick comes out clean.
