One Pan Chocolate Cake

This is an unusual process to make a cake. I rather like the idea of it. It is from the Women's Assembly Longview Community Church Cook Book 1959.
One Pan Chocolate Cake 

 3 cups flour
 2 cups sugar
 6 Tablespoons cocoa
 2 teaspoons baking soda 
1 1/2 teaspoon salt 
3/4 cup oil 
2 teaspoon vanilla
 2 tablespoons vinegar
 2 cups water

 Sift dry ingredients in ungreased 9x13 pan. Add liquids and stir well. Bake 40 minutes at 375 degrees. Serve warm with whipped cream or it may be iced when cool. Mrs. J. A. Rhodes

Cream Cheese Mints

These are the mints that Mom always made for wedding receptions and parties. There was always a container of them in the freezer waiting to be eaten!
Cream Cheese Mints 

8 oz. cream cheese, softened 
1 t. peppermint extract 
2 lbs. powdered sugar (7 1/2- 8 cups) 

Beat cream cheese and flavoring on low until smooth. Add 6 cups powdered sugar. Mix well. Add more powdered sugar until about the consistency of play dough. Pinch off a ball the size of a marble. Roll in granulated sugar and press into a candy mold.

Ooie Gooies

This recipe came from a dear friend, Michelle, who bribed her students with these cookies. And, it worked! They students worked extra hard to earn these delicious cookies!

Ooie Gooies 

1 14 oz. pkg. caramels, unwrapped

1/3 c. canned milk

1 box German Chocolate Cake Mix

1/2 c. butter, melted

1/3 c. canned milk

1 c. chopped nuts (walnuts, pecans, your choice of nuts)

1 c. chocolate chips

1 c. coconut

Melt caramels and 1/3 c. canned milk together over medium heat. Stir occassionally to blend. Mix cake mix, melted butter and 1/3 c. canned milk together. I like to use the electric mixer to combine the ingredients together well. Press 2/3 of the batter into a greased 9x13 pan. Bake at 350 degreese for 6 minutes. Sprinkle with chocolate chips, chopped nuts and coconut. Drizzle the melted caramel over. Drop the remaining cake mix dough over. Add more chocolate chips, chopped nuts and coconut as desired. Sometimes it just needs a little bit more! Bake at 350 degrees for 15-18 minutes. Cool on a wire rack before cutting.

Chocolate Waffle Iron Cookies

 These are cookies that you bake in the waffle iron... like a waffle... then frost with chocolate frosting. Yum!

Waffle Iron Cookies

1 1/2 c. sugar

2 c. butter, softened

4 eggs

2 t. vanilla

2 c. flour

1/2 c. cocoa

1/2 t. salt

Cream sugar and butter. Add eggs and mix well.  Add remaining ingredients and mix well. Drop by teaspoonful onto hot waffle iron. Cook for 1-2 minutes. Let cool. Frost with chocolate frosting.

Chocolate Frosting

1/3 c. butter, softened

1/3 c. cocoa

3 T. oil

2 c. powdered sugar

1 1/2 t. vanilla

2 T. milk

Mix all ingredients together and spoon onto cookies, spreading a little with the back of the spoon.

Lemon Squares

  You can't go wrong with Lemon Squares. They are great cookies!




2 c. flour

1 c. butter, softened

1/2 c. powdered sugar

4 eggs

2 c. sugar

1 t. baking powder

1/2 t. salt

4 T. lemon juice (Fresh squeezed lemon juice is the best tasting.)

Mix, flour, butter and powdered sugar. Press into a 9x13 pan. bake at 350 degrees for 20 minutes. Meanwhile, beat the remaining ingredients for 3 minutes or until fluffy. As soon as the crust baking time is up, pour lemon mixture over hot crust. This is the secret to a delicious lemon square cookie. Bake for 25-30 minutes longer. Cool. Cut into 1 1/2" squares.

Peanut Butter Blossoms

 Yum! We LOVE Peanut Butter Blossoms.

36 Hersheys Kisses, unwrapped

1/2 c. shortening

1/2 c. peanut butter

1/2 c. sugar

1/2 c. brown sugar

1 egg

2 T. milk

1 t. vanilla

1 3/4 c. flour

1 t. baking soda

1/2 t. salt

Mix together shortening, peanut butter, both sugars and egg. Add the milk and vanilla. Then, add the flour, baking soda and salt until dough forms. Roll into 1" balls. Then, roll in white sugar. Place on ungreased cookie sheet, about 2" apart. Bake at 375 degrees for 8-10 minutes. Remove from oven and press a Hersheys Kiss in the center of each cookie. Let cool on cooling rack. Makes 36 cookies.
