One Dish Breakfast Casserole

One Dish Breakfast Casserole

Bread
Butter
12 eggs (2 eggs per person)
1 can cream of mushroom soup
salt and pepper
1 dozen breakfast link sausages, browned
1 cup shredded cheddar cheese

 Butter bread, enough to cover the bottom of a greased 9x13 pan, buttered side of the bread down. Beat eggs, add soup and salt and pepper. Pour egg mixture over the bread. Place cooked sausages on bread. Sprinkle cheese over mixture. Bake at 350 degrees for 45 minutes. (Test like custard to determine when done.)

Thsi is a great way to quickly serve breakfast for a large group. This can be made the night before.

Jello Salad for the Holidays

Cranberry Jello Salad


1 pkg. large cherry jello
2 cups hot water
1 cup whole cranberries jell (canned)

Stir together, then let set until syrupy. Add:

1 cup crushed pineapple, NOT drained
1/2 cup chopped nuts
1 cup chopped celery
1 cup diced apples

Stir into cranberry mixture and let set to firm.


Pumpkin Bars

Pumpkin  Bars

4 eggs
1 cup oil
2 cups sugar
1/2 teaspoon salt
1 #303 can (or 2 cups) pumpkin
2 1/4 cup flour
1 teaspoon baking soda
2 teaspoon baking powder
2 teaspoon cinnamon

Combine ingredients, spread on greased cookie sheet and bake at 350 degrees for 30 minutes.

Frosting

2 1/2 cups powdered sugar
1 teaspoon vanilla
1 tablespoon milk
3 oz. cream cheese, softened
3/4 cube butter

Beat together and spread on cool bars.

Goulash

From the Sunbeam Automatic Frypan Cookbook from the 1950's.

Goulash
(Hamburger Macaroni Casserole)

1 lb. hamburger
1/3 cup chopped onions
3 1/2 cups canned tomatoes
1 cup diced celery
1/2 diced green pepper
2 teaspoon salt
1/4 teaspoon celery salt
1/8 teaspoon pepper
1 teaspoon Worcestershire sauce
8 oz. elbow macaroni, cooked, drained and rinsed
Chopped parsley
Grated Cheese

Preheat Sunbeam to 360 degrees. Fry hamburger until beginning to brown and add onions until done., about 8 minutes. Add tomatoes, celery, peppers, seasonings and cooked macaroni. Bring to a boil.  Cover, turn dial to 220 degrees and simmer about 35 minutes, stirring occassionally. Sprinkle with chopped parsley and grated cheese. Serve directly from the Sunbeam.
