Many years ago we had dinner at my sister-in-law, Judy's house. She served us these mashed potatoes and we loved them! I asked for the recipe and have been making these special mashed potatoes ever since. They are special because they are a mix of red potatoes and butternut squash!
Judy's Mashed Potatoes
Boil red potatoes (with only eyes and bad spots peeled off) cut into 1/4ths, with one butternut squash (peeled and cut into chunks). Boil until fork tender. Mashed with 1 cube of butter, salt and pepper to taste.
