This is a recipe from Karen. I found it while cleaning out my old emails. I asked for it a long time ago and then neglected to add it to the food blog.
8-10 med. size peaches, peeled and sliced
2 cups heavy whipping cream
1 box vanilla wafer cookies, crushed
1 cube butter, melted
1/2 cup sugar
1 1/2 cup cashew pieces
Bottom Crust: Mix 3/4 of the cookie crumbs with the melted butter and sugar. Press into a 9x13 pan. Sprinkle on 1/2 of the cashews.
Next Layer: Whip the cream and sweeten with 1/2 cup powdered sugar and 1 tsp. vanilla. Fold in the peaches and spoon on the crust.
Next Layer: Sprinkle on the remaining crumbs and then the remaining cashews. Cover and keep in fridge until ready to serve.
