Vegan Ranch Dressing



Vegan Ranch Dressing
Ingredients:
12 oz extra-firm silken tofu, cut into 1-inch cubes
2 Tbsp vegan mayonnaise (Veganaise is best!)
¼ cup water
2 Tbsp vegetable broth powder
2 Tbsp apple cider vinegar
1 tsp garlic powder
1 tsp onion flakes
1 tsp light agave nectar (or sugar)
¼  tsp salt
Pinch black pepper
¼ cup lightly packed fresh dill (or 1 tsp dried)
Directions:
1.      Bring a small pot of water to a boil, add tofu, and cover. Simmer for 2 minutes and then drain under cool water.  (This takes out the beany flavor)
2.      Mix the tofu, veganaise, and water in a blender until smooth.
3.      Add the remaining ingredients and blend. 
4.      Chill until ready to use.
Notes:
Keeps well for about 3 days in the refrigerator.  It won’t last that long.  This is an amazingly good dressing.  You can eat it with anything asit is only 40 calories for every ¼ cup!  If you just can’t finish it off, blend it with some garbanzo beans for a great hummus.  Adapted from Appetite for Reduction by Isa Chandra Moskowitz
