Tofu Scramble (Better than
Scrambled Eggs! - Joshua's Favorite!)

Ingredients:
1 large potato, finely
chopped
1 Tbsp olive oil
1 small onion, finely
chopped
3 garlic cloves, minced
1 orange or yellow bell
pepper
4 cups spinach
1 Pkg Extra Firm Tofu
1 Pkg Vegan cheese
1 avocado
Salt / pepper to taste
8 Whole Wheat Tortillas

Directions:
1. Begin cooking potatoes in olive oil and
gradually add onions, then garlic, then peppers.
2. When soft, add spinach.
3. When wilted, add tofu. Break apart tofu as it cooks.
4. Remove from heat when water from tofu is
gone.
5. Serve with veganaise, tortillas, vegan
cheese, salsa, avocados, etc.
