Homemade Ice Cream

This is Grandma Irvine's (Nelma Irvine) special homemade ice cream. She always served it at family gatherings.

Homemade Ice Cream



1 qt. fruit, mashed
2 cups sugar

Mix together and let stand at room temperature until sugar dissolves.

1- 15 oz. can evaporated milk
1 cup to 1 pint whipping cream (You decided on the thickness.)

Add milk and cream to the fruit mixture.

Pour into the ice cream maker container. Use regular milk to fill to the fill line on the container.

Freeze with ice and salt around the outside of the container, as per ice cream maker instructions.

Makes 4 quarts.

Mini Pizza Bagels

Don't you love the Six Sisters Stuff?  I think that we need to try these!


Mini Pizza Bagels

Serves: 4-6

These mini pizza bagels make a great snack or main dish. Your kids will have a great time putting their favorite toppings on each of them!

Ingredients

·    8 mini bagels, halved

·    ½ cup pizza sauce

·    ½ cup shredded mozzarella cheese

·    Pizza toppings (mini pepperonis, pineapple tidbits, ham pieces, olives, onions, green pepper slices, etc.)

Instructions

1.    Preheat oven to 425 degrees.

2.    Arrange your bagels on a cookie sheet, with the cut side up. Top with a spoonful of pizza sauce, a sprinkle of cheese, and your favorite pizza toppings.

3.    Bake for 4-6 minutes, until cheese is melted and bagels are slightly browned.

Chess Bars

Chess Bars


Crust:
1 yellow cake mix
1 stick of butter, softened or melted
1 egg, beaten

Filling:
1 pkg. cream cheese, softened
1 stick of butter, softened or melted
2 eggs, beaten
1 lb. powdered sugar
1 tsp. vanilla (French Vanilla is fantastic!)

Crust:
Mix together cake mix, butter and egg. Press into a 9x13 baking dish.

Filling:
Cream the cream cheese and butter until smooth.  Beat in eggs. Slowly beat in the powdered sugar, a little at a time. Stir in vanilla. Pour over crust. Bake at 350 degrees for 45 minutes. Sometimes, longer is needed. The top should be a golden brown and have the texture of a cheesecake.

Peanut Butter and Soy Noodles

One more delicious recipe from Mandy.

Mandy's Peanut Butter and Soy Noodle



Cook 1/2 lb. spaghetti noodles.

In a large bowl, start with 2-3 T. peanut butter. You can warm up the peanut butter to loosen it up. whisk in 2 T. honey, 1/4 c. soy sauce, 1 t. sesame oil and 2 t, ground ginger. Once it is mixed well, taste it. Then add whatever it needs...more honey or ginger, maybe. Whateve you like! You could even add something that I haven't thought of yet!

Toss the dressing with the warm noodles. I like to add veggies, as well. I will finely chop some onions, shred some carrots, cucumber or celery...whatever you've got in the fridge and whatever will give it some crunch. top the noodles off with some toasted sesame seeds or chopped peanuts.

I don't measure any of this. I just throw it together and the boys love it!

Kentucky Derby Pie

Another fantastic recipe from Mandy! Traditionally, Derby Pie has bourbon in it, but Mandy chooses to omit it.

Kentucky Derby Pie





1/4 c. butter, softened
1 c. sugar
3 eggs, beaten
3/4 c. light corn syrup
1/4 tsp. salt
1 tbsp. flour
1 tsp. vanilla
1 c. semi-sweet chocolate chips
1 c. chopped pecans

9" unbaked pie crust

Cream butter and sugar. Add eggs, corn syrup, salt, flour and vanilla. Fold in chocolate chips and pecans. Pour into into pie crust. Bake at 350 degrees for 45 minutes.  Often this it not long enough, so keep an eye on it. Take it out when the center is barely jiggley.

My Favorite Chocolate Frosting

This is a recipe from Mandy. She says:
"Every year growing up, we got to choose which birthday cake we wanted on our birthday. I ALWAYS chose a yellow cake with this frosting. When I taste it, I'm taken back to EVERY Birthday I've ever had!"


1 cup butter, softened
1/2 cup unsweetened cocoa powder
1/4 cup milk, maybe more
2 tsp. vanilla
9 cups powdered sugar

Beat butter until smooth.  Slowly (not to  make a mess), beat in cocoa powder. Beat in 1/4 cup milk and vanilla. Slowly, beat in powdered sugar, 1 cup at a time. If it seems to get too stiff, add a splash more of milk, until all of the sugar is incorporated and it has a smooth spreadable texture. Frost your cake!

Tex-Mex Enchiladas

I was cleaning out a box of saved recipes and found this recipe. It had my handwriting on it, saying that it was Wonderful! And, that it needed More Cheese! (I'd say DOUBLE the cheese.) I made the cheese enchiladas for dinner and we both Loved It! Jay asked me to make it again, soon!

Tex-Mex Enchiladas

"Canned chili contributes to the sauce in this enchilada recipe with roots in Chihuahua, Mexico. Assemble and cook right away, or put it in the refrigerator for a quick meal later."
INGREDIENTS:
2 (11.25 ounce) cans chili without beans
1 cup enchilada sauce
1/2 cup vegetable oil
1 tablespoon chili powder
15 corn tortillas
1 pound shredded Cheddar cheese
1 onion, chopped
DIRECTIONS:
1.Preheat an oven to 350 degrees F (175 degrees C).
2.Mix the chili and enchilada sauce together in a small saucepan over medium-low heat, stirring occasionally as it simmers.
3.Heat the vegetable oil and chili powder together in a small skillet over medium heat. Gently lay a tortilla in the hot oil and cook until the tortilla starts to puff. Remove with a spatula and place on a plate. Immediately sprinkle about 1/4 cup Cheddar cheese and 1 tablespoon chopped onion down the center of the tortilla; roll the tortilla tightly around the mixture and place, seam-side down, into the bottom of a 9x13-inch baking dish. Repeat this process until all the tortillas are used.
4.Sprinkle about 2/3 of the remaining Cheddar cheese over the rolled enchiladas. Pour the warm chili mixture evenly over the enchiladas. Scatter the remaining Cheddar cheese over the layer of the chili mixture.
5.Bake in the preheated oven until the top is bubbling, 20 to 25 minutes.

Gateau Fondant Aux Poires, A French Pear Cake

This is a delicious cake that was made for my daughter, Alison, by her friend, Maria. It is a light lemony, light texture, fruit filled cake. It is from mykitchenintherockies.com.


Gateau Fondant Aux Poires- French Pear Cake 


  • 3-4 small ripe pears, peeled and quartered or cubed
  • 1 cup 1½ Tablespoons (250 g) butter, at room temperature
  • zest of 1 lemon
  • 1¼ cup (250 g) sugar (Kirsten used 200 g)
  • ¼ teaspoon vanilla extract
  • 4 eggs, at room temperature
  • 2 cups 1½ tablespoons (250 g) flour
  • ½ teaspoon baking powder
  • a pinch of salt
Instructions
  1. Preheat Convection oven to 350 F.
  2. Grease a 24 cm (9½ inch) spring pan
  3. In a stand mixer with the paddle attachment beat butter and sugar together until very fluffy and white.
  4. Mix in the eggs slowly, one egg at a time. Add vanilla and lemon zest.
  5. In another bowl sift together flour, salt and baking powder.
  6. Add the flour mixture slowly to the egg mixture. Don't over mix.
  7. Pour half of the batter into the spring pan. Place the pears on top. Pour the rest of the batter in the pan.
  8. Bake for about 60 min or until a tooth pick inserted in the center of the cake comes out clean.
  9. Dust with powdered sugar before serving.
